1. Preheat the oven to 220°C (425°F).
2. Mix the sugars, salt, spices and lemon zest in a large bowl.
3. Beat the eggs and add them to the bowl.
4. Add the pumpkin puree and stir the mixture.
5. Add the cream and mix it.
6. Mix everything by hand until everything is well mixed. The mixture will be quite runny! Let's pour the mixture on top of our pie crust and bake it at 220°C (425°F) for 15 minutes.
7. After 15 minutes, lower the oven temperature to 175°C (350°F) and bake for 40-50 minutes, until a toothpick comes out of the center of the pie completely clean.
8. Let it cool for about 2 hours so that the filling is completely ready. You can enjoy this pumpkin pie on its own or with whipped cream on top. It also goes very well with a good vanilla ice cream.
