Easy Slow Cooker BBQ Pulled Pork1. Spray the inside of slow cooker with non-stick cooking spray
2. Place sliced onions in the slow cooker
3. Mix garlic, oregano, salt and crushed red pepper together in a small bowl
4. Rub the pork roast with the seasoning mix and place in slow cooker on top of the onions
5. Pour chicken broth and 1 3/4 cups of the BBQ sauce on top of the roast in the slow cooker
6. Cover and cook on low for 8 hours or until meat shreds easily with a fork
Pulled Pork Nachos
1. Preheat oven to 400 degrees
2. Spread chips evenly on a foil covered baking sheet
3. Add a thin layer of BBQ pulled pork on top of the chips
4. Sprinkle the chopped red onion and shredded cheese evenly over the pulled pork and chips
5. Cook for 5-7 minutes until cheese is fully melted
6. Drizzle the remaining 1/4 cup of barbeque sauce over the nachos and sprinkle the chopped jalapeño on top and serve immediately
Refrigerate or freeze remaining pulled pork to be reheated and eaten as pulled pork sandwiches, add it to your favorite mac-n-cheese, home-made pulled pork quesadillas and more!
