Heat oven to 350 degrees.
Cook meat in a large skillet over medium-high heat 5 min. or until browned on all sides, turning occasionally. Put it on a baking sheet; completely cover the top with roasted bacon slices, overlapping them if necessary. Bake 1 hour or until it is done (reaches an internal temperature of 145ºF).
Cut 1 pineapple wedge, meanwhile, into 12 pieces; reserve for later use. Chop remaining pineapple; put it in the blender with the remaining ingredients and blend until smooth. Pour into a saucepan; simmer, stirring frequently. Keep a soft over low heat for 20 min boil, Stirring occasionally.
Put the meat on a cutting board. Cover with a loose sheet of foil; let stand 5 min. Meanwhile, cook the pineapple wedges in skillet over medium heat for 5 min. or until evenly browned
Slice the meat. Serve with pineapple wedges and mole.
