Whipped Ricotta on Toast with Balsamic Cherries

Directions

1. Brush each slice of ciabatta bread with the olive oil and place on a hot skillet until each side is nicely toasted.
2. Cut the cherries in half, removing the stem and pit. 
3. In a medium bowl, combine the balsamic vinegar and cherries, tossing to thoroughly mix.
4. For the whipped ricotta, simply place the ricotta cheese in a food processor and blend for only a few seconds, until creamy. 
4. Grab a slice of ciabatta toast, spread on the whipped ricotta and top with balsamic cherries and salt and pepper to taste.
