  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a bowl, combine the cake mix, oil and eggs and stir together. 
  3. Place the mix in the refrigerator for 15 minutes to make it easier to scoop.
  4. Scoop the mix into about 1 inch balls and place onto the parchment paper.
  5. Bake the strawberry cookies for 9-11 minutes, until cookies are set and before they turn brown. 
  6. Cool the cookies on a cooling rack.
  7. Once the strawberry cookies are cooled, melt the chocolate chips in a microwave-safe bowl, for 30 seconds at a time, stirring in between.
  8. Once the chocolate is melted and smooth, dip half of the cooled cookies into the chocolate and place on wax paper. 
  9. If you chose to use both semi-sweet and white chocolate chips, dip half of the cookies in semi-sweet chocolate and the other half in white chocolate.
  10. Add sprinkles or any festive decorations to the cookies before allowing the chocolate to cool and set.
