1.Cook noodles according to package directions. Drain and keep warm.2.While noodles cook, cut pork crosswise into 8 pieces. Place each piece between 2 sheets of heavy-duty plastic wrap; flatten to1/4-inch thickness using a meat mallet or rolling pin.
3.Heat oil in a large nonstick skillet over medium-high heat. Add pork slices, sauté 2 to 3 minutes on each side. Remove from pan; set aside. Add mushrooms and garlic; sauté 1 minute. Add broth and remaining ingredients; bring to a boil. Cook 2 minutes, stirring frequently. Return pork to skillet, reduce heat, and simmer 2 minutes. Serve over noodles.
