Directions
1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add gnocchi and stir occasionally, until tender and starting to brown (about 5-7 min). With a slotted spoon, transfer the gnocchi to a separate bowl.
2. After the gnocchi is cooked, add the remaining olive oil and the onion to the pan. Cook over medium heat, for about 2 minutes, stirring so the onion doesn’t stick. Stir in the garlic and water and cover the pan for 4-6 min until the onion is cooked.
3. Add the chard (or spinach) and cook until it begins to wilt (1-2 min). Add in tomatoes, beans and pepper, stirring the entire time, and bring the pan to a simmer.
4. Transfer the gnocchi back into the pan and sprinkle mozzarella on top. Cover the pan until the cheese is melted and the sauce begins to bubble (about 3 min). Serve and enjoy!
