- Combine cream cheese, lemon juice and 1/4 cup sugar in a bowl and use a mixer until ingredients are creamy. Set aside.
- Place a saucepan on low heat and combine 4 cups raspberries and 1/3 cup sugar. In a small separate bowl or measuring cup, mix water and cornstarch.
- Add the cornstarch mixture into the saucepan, stirring in between.
- Continue to simmer until it thickens slightly and remove from heat and allow to cool for about 15-20 minutes.
- Place granola or crushed graham crackers at the bottom of your glass. Layer on some of the cheesecake filling. Place a layer of the raspberry sauce on top of the first layer of cheesecake, before topping with a second layer of cheesecake filling and fresh raspberries.
