Directions
1.Preheat oven to 350 degrees.
2. Heat oil in small oven proof skillet. Add potatoes and cook for about 5 minutes; stirring occasionally. Add mushrooms and cook additional 3 minutes. Stir in zucchini, green onion, jalapeno and ham, stir-fry ingredients together for about 2 minutes. Add spinach, arrange ingredients evenly in bottom of skillet and remove from heat; set aside.
3. In separate bowl, whisk together eggs, milk, cheeses, salt and pepper. Pour over ham mixture in skillet.
4. Place skillet in oven and bake for about 20 minutes or until center of frittata is set.
5. Top with tomatoes, avocado and salsa, if desired.
