1. In a large Dutch oven, heat olive oil over medium heat. Add onion and sauté until translucent. Add carrots, celery and cook another 5 minutes, stirring frequently.
2. Stir in garlic salt, Italian seasoning and diced tomatoes. Add bay leaves and vegetable broth. Let simmer over low heat for about 30 minutes.
3. Add zucchini, cannellini beans and pasta. Let simmer over low heat for about 20 minutes.
4. tir in spinach and balsamic vinegar. Let simmer until spinach is wilted.
5. Place into bowls and sprinkle with Parmesan cheese before serving, if desired.
