Season beef with salt and pepper. Shape ground beef into 1/2 inch thick patties.Heat nonstick stove-top grill pan over medium-high heat until hot. Add patties; cook 2 minutes. Reduce heat to medium-low; cook an additional 6 to 10 minutes or until no longer pink in center, turning once. Melt pepper jack cheese slices on the patty.
Spread top halves of buns with guacamole. Place lettuce, tomatoes, red onion and patties on bottom halves. Combine halves and enjoy!
