Directions1. Quarter your tomatoes, discard the pulp and seeds, then dice into small chunks 2. Chop the romaine into small pieces (Pick up Dole Chopped Romaine lettuce and half the work will already be done for you) 3. In a large bowl, combine chicken, light mayo, romaine and tomatoes. Stir to mix well. 4. Season to taste with salt and pepper 5. Cut your avocados in half, remove the pits, and season lightly with salt and pepper 6. Scoop approximately two heaping tablespoons of the chicken salad on top of each avocado half. If you want to even out the chicken to avocado mix ratio, just scoop and additional tablespoon of avocado out before you add the chicken salad.
